Fresh turmeric and coriander couscous with rainbow carrots recipe: a delicious and colourful snack, easy to try at home. Recipe from The Life Delight. The distinct yet delicate flavor of the fresh turmeric combined with the earthy and aromatic coriander and citrus is simply delightful. it is also full of anti-inflammatory and immune-boosting compounds to keep you feeling tip-top this winter.

Ingredients

Serves 3 1 can of chickpeas - drained approx 250g 100g tahini 3 tbsp olive oil 1 handful fresh coriander 1?4 tsp Himalayan crystal salt/sea salt 1?4-1?2 tsp black pepper 2 tsp fresh turmeric finely grated 1 garlic clove 2 tbsp fresh lemon juice 1 tbsp fresh lime juice 1 bag rainbow carrots approx 1kg

Method

Place all the ingredients except the rainbow carrots into a food processor and blend until smooth. Peel the carrots and cut in half then slice lengthways into dipping-sized pieces. To serve, place the hummus in a small bowl in the centre of a large plate/tray, and place the carrots in a rainbow of colours around the edge. And enjoy!
